Subject: kettles and other

Lost a handle on my canning pot last week
-(. I've since ordered one of the Rapid
60+qt kettles. Would anybody want to comment
on the handles on these things?
Secondly how long can I keep my yeast
starter going? I've fed it again but I won't
have the pot until probably next week.
When I was reading Fosters Pale ale book he
mentions keeping carbonation low enough with
a keg system is nearly impossible. So has
anybody tried pure Nitrogen instead of CO2?
