Alberta mentioned this phenomenon also. The only solution, as I recall,
is (as you said), to have a lot of headspace.

I believe Alberta said to get a non-plastic bubbler, so you can boil it.
If you use PE tubing (generally the "suitable for drinking water" tubing is
PE), you can boil that too. That seems like the easiest method of sanitation
to me.
